Immature Cubanelle peppers are yellow-green and look like a dash of elongated bell pepper or a banana wax pepper. They have thin skins but thick walls and a somewhat mild, sweet taste with a bit of heat. Mature Cubanelles are vibrant orange-red and hotter, though still sweet.
